Karaage

Karaage is Japanese style fried chicken.

Karaage can be a meal or a snack and it is very popular dish ordered at Izakaya(Japanese tavern).

The difference between Japanese karaagae and western fried chicken is that western version uses seasonings too but dried ones, like spices, salts and peppers. On the other hand Japanese karaage uses liquid seasonings as like soy sauce, squeezed garlic, squeezed ginger and etc.

Usually the chicken with soy sauce and other seasonings and then covered by either flour or starch and deep fried. Due to it is marinated, the inside is juicy but outside is crispy thanks to the flour or starch. Then, no need to add sauces on it.

This karaage was taken in Hakodate, Hokkaido where karaage is also called as ZANGI. Nakatsu city in Oita prefecture in Kyushu and Niihama city in Ehime prefecture in Shikoku also have local special karaage too.
